How to use

Drying the products
Drying the film on the product is an important requirement for optimum results. NUTRAFILM should have fully dried on the product prior to smoking or cooking. The surface should feel dry.

Recommended drying time is 90 - 120 minutes at 75°C and 0% air humidity. Only after this can the smoking/cooking process using steam begin. The product should feel dry.

Note: When wrapping the products ensure that the film overlaps as little as possible. Additional plastic cooking bags or other films may not be used.

  • The edible casing is made of natural, water-soluble polysaccharides; the ingredients are renewable and available in ample supply.
  • Excellent appearance and texture.
  • Primarily used for fresh sausages (e.g. breakfast or Italian sausage), but can also be used for blanched, smoked & blanched or hard cured sausages as long as they are suitably prepared (the ideal parameters for such preparation are available on request).
  • Currently available in 17, 20, 22 and 23mm sizes; elastic structure; can be used on traditional sausage filling machines.
  • Can form casings of larger diameter up to 34mm in elastic format, pending sufficient usage volumes.
  • Certified kosher - ideal for use in kosher or halal sausage products.
  • During cooking the casing partially dissolves, making it an ideal substitute for skinless sausage products.
  • All ingredients are allergen free and not genetically modified.
  • Made completely of non-animal based polymers - no cross-species labelling concerns.
  • As the casing is plant based, there are no issues at all in relation to any possible spread of animal diseases.

* As it is a plant-based casing, NutraCasing needs to be handled differently to collagen, natural or cellulose gut. So that NutraCasing works as intended, you need to adhere to the preparation method described above in order to achieve outstanding results.
* Prior to filling, NutraCasing must not be soaked or exposed to excessive humidity.
* Sausage filled in NutraCasing must not be prepared by boiling
** Sausages in NutraCasing should NEVER be rinsed immediately after cooking.


RECOMMENDED METHODS OF PREPARATION

 

SMOKED & BLANCHED SAUSAGE

  • Using an 11mm funnel on a turning system (e.g. Handtmann, Vemag, etc.), fill the sausage.
  • Step 1) DRY - 40 minutes at 60°C and 15% relative humidity
  • Step 2) SMOKE – liquid or natural smoke (depending on the customer – if liquid smoke is being used, a 30-minute wait and 20 minutes of drying time are required)
  • Step 3) BLANCH at 75°C and 80% relative humidity until the internal temperature reaches 70°C.
  • Remove from smoking chamber, allow to cool for 10 minutes, rinse of for 2 minutes and cool fully before packing.

RAW SAUSAGE

  • Fill using an 11mm funnel
  • For cutting into portions the sausage can be turned or forwarded by a Z-turning system.
  • Raw sausage (breakfast, Italian etc.) can be pan-fried in a light oil, grilled or deep frozen – Sausage filled in NutraCasing CANNOT be prepared by boiling in water

You company logo can now appear on your butcher’s shop products!

USE WITH MEAT PRODUCTS
Can be used for roast or cooked meat products in netting. Your company logo or any other design can be printed on the film. The dye used is of totally natural origin (caramel colour).
During food preparation the logo gets transferred onto your ham or roast.

 



RECOMMENDED PROCESSING PROCEDURE NUTRAFILM™ 2141 - LOGO
